Simao Bamboo Leaf Green Tea - 2 oz
Delicate Assamica buds from Simao were picked at First Flush and processed in the style of Sichuan's zhu ye qing for a complex, savory Yunnan green with a lot of cha qi! The dry leaf presents with a distinct umami - marine (bonito?) aroma. The tea soup is strong with a savory, brothy, umami character, and notes of edamame and spinach. While rich in flavor and tannins, this tea has a deep, sweet counternote that provides an overall balance. The drinker is left with a stimulated palate and 'awakened' body feeling. I like to brew this tea in a gaiwan or "grandpa-style" using a 12 ounce glass, about 2 grams of tea, and pouring hot water over to brew. Sip without straining and re-brew throughout the day. A little goes a long way, Play around with amounts and brewing temps in the range of 160 - 175F. Yunnan, China Spring 2021.
