This premium grade Long jing was picked in Hangzhou in early Spring before the rains. It is one of China's famous teas and widely enjoyed until early Fall for its refreshing properties. The classic description of Long Jing is its "roasted chestnut" aroma, and viscous tea soup with sweet, nutty, brothy and vegetal notes. I like to brew it 'Grandpa Style", which is typical in Hangzhou - placing a few grams of leaves in a glass, and pouring hot water over, drinking without straining. Can usually brew 2 to 3 times this way. Brew with 175 to 185 F water, lower to bring out the sweetness. Zhejiang, China Spring Flush 2021.
